PREFACE Food is a basic need. Though tastes and trends will change, technology will advance and demographics will shift, people will always need to eat. Now that doesn’t mean that starting and running a profitable food – service business will be a proverbial piece of cake. Quite the contrary: This will probably be the hardest work you’ve ever done. But it has the potential to be tremendously rewarding – both financially and emotionally – and it can be lots of fun.
